Made the most amazing chocolate cake/torte today. Only 2g carbs per slice. I got this recipe online from here but it’ll include in here for reference sake, and I reduced the amount of sweeter in my version.
Low carb Pecan Chocolate Torte
2 cups pecans
1/3 cup cocoa
1 tsp baking powder
1/4 tsp salt
4 eggs
1/2 cup butter, melted
1 tsp vanilla
1/4 cup xylitol
2/3 cup equivalent liquid splenda (30 drops of ez-sweetz)
1/2 cup water
Heat the oven to 350 F. Grease a 8″ round springform pan.
1) Process the pecans in a food processor for a minute or so until you have small meal
2) Add the rest of the dry ingredients. Pulse again.
3) add all the wet ingredients and process until well blended (use a spatula to scrap down the sides a couple times)
4) pour batter into greased pan and bake. My cake took ~30mins, but start checking around 25. Bake until a toothpick in the center comes out clean.
5) let cool and serve.
Note, this cake will rise while baking but settle when cooled. This is fine, as it makes for a nice dense moist cake. Very yummy!
